Mini Pecan Pies

I was in need of something relatively easy and inexpensive to make for Alexandra’s teachers for Christmas and came across this recipe from Taste of Home via Pinterest for some mini pecan pies. Let me just say, I’m not a huge fan of pecan pie…or really any pie for that matter, but I was addicted to these little guys. Holy moly they were incredible and I’ll be making several more batches for Christmas. The only things I tweaked were that I added 1 teaspoon of vanilla per batch and chopped up some pecans for the filling as well as some halves on top – all based on some reviewers comments.
